Salad Rolls and Peanut Sauce- Thai Style

This is a light dish made out of delicate rice wrappers, thin noodles, vegetables and shrimp. Needless to say, if you are on a highly tight dieting schedule and want to eat something healthy but “filling”. This will be a perfect option for you. Salad rolls are also called as summer rolls. They are popular in Thai cuisines . They are real crunchy and filling enough. I never knew that I could make these salad rolls at home that too so easily until I saw the cooking video of the award winning chef Mr. Gordon Ramsay. That boasted up my confident. I got all the necessary ingredients from the nearby asisan grocery store and here I am sharing the recipe of salad rolls with y’all.

The salad rolls are basically the uncooked version of spring rolls or egg rolls. You can throw in a variety of fresh veggies to make it interesting. Baby lettuce, napa cabbage and carrots brings in the freshness and crunchiness. You can also add kernel corns, chopped purple cabbage, peppers, avocadoes etc. For vegeterians, you can add tofu as well.

One most important ingredient which I would suggest not to miss out is the holy basil. Wow! the aroma is incredible. The flavor that herbs brings into the dish is unbeatable.

 

So, I guess you are ready to make them. These salad rolls can make up your dinner or a healthy lunch or even an interesting appetizer.

  1. Cook the thin rice noodles in the boiling water for about 1 minute. Once the rice noodles are cooked, rinse them with cold water and place them aside.
  2. Boil the water and cook the deveined shrimp. Add some salt to taste.
  3. Take a large vessel. Add the grated napa cabbage, carrots, basils, thin rice noodles and cooked shrimp.
Sauce Preparation
  1. Whisk together all ingredients - lime juice, soy sauce, fish sauce, chopped garlic in small non-reactive bowl. Taste and adjust seasoning accordingly.
  2. Add the sauce to the large vessel and gently toss it. The sauce should be mixed completely.
To prepare rice paper wraps
  1. Fill a large pan or bowl with hot tap water. Dip 1 rice paper wrapper into water, lift out, and drain briefly.
  2. Set on a flat surface.
To assemble the salad rolls
  1. Place 1/2 cup filling in the center of each wrapper.
  2. To roll salad rolls, press down on filling, fold the bottom of each wrapper over filling, then fold in sides; roll tightly.
  3. Press edges to seal
  4. Set rolls on a platter.
To make peanut sauce
  1. take 3 tsbp of peanut butter. Add 1 tbsp soya sauce, 1 tsp chilli flakes and 1 tbsp fish sauce. Whisk or blend them well.
