My husband bought a big Dungeness crab from the local Asian market and within no time a lipsmacking crab curry was ready in my kitchen. Wow! I totally loved the outcome. And here I am sharing this sumptuous recipe with you all.

What is a Dungeness crab?
Dungeness crab is a species of crab that inhabits eelgrass beds and water bottoms on the west coast of North America. So being in Oregon never stops me from buying this variety of crab because I get them fresh and live from the water. The crab season typically starts from December to August and there are 6 major ports running the length of Oregon coast from Astoria to Brookings.

Crab meat is sweet and hence, adding shallots to the curry instead of big onion would add more flavor to the curry. Never add to much of tomatoes and grated coconut to this dish. This will lead to loosening the flavor of crab meat.
